Broad Bean Salsa - a side dish

What you need...

Broad beans (fresh)
Onion
2 big tomatoes
Chilli
Parsley
Cayenne pepper (little bit)
Pepper
Lemon juice
Garlic would have been nice
Tomato puree might have been nice?

What you need to do...

Boil the broad beans for about 6 minutes
Fry onion, chilli... then add tomatoes
Then add broad beans
Add everything else
Cook for a short while.  Don't let it go too dry.

Was nice with a quorn burger type thing.

Soy-a-toe Patties

What you need...

Potatoes
Soy mince
Onions
Cheese
Cream cheese
Garlic
Pine nuts

What you do...

Make some mash potato (very soft, boil for 15 minutes).
Get Soy mince ready.
Fry onions, garlic, lots of herbs and maybe some chilli?
Mash the mash with cream cheese, cheese, onions and stuff
Add the soy mince to the mash.
Keep mashing till it looks nice.

Make into little(ish) patties, over in egg and flour to make the nice outside.  Then fry.
Fry, fry, fry... it takes a while.
Turn the patties over after about 7 minutes.  This is quite messy.
fry, fry, fry... done!

What you get...

Sadly I didn't get a photo of this one.  It wasn't that photogenic though.

Chilli

What you need...

A tin of tomatoes
Lots of real tomatoes
2 onions
Chilli
Marmite
Soy mince
Some stock powder
Balsamic vinegar
Parsley (so much parsley)


What you need to do...

Fry onions and chilli.
Add all the nice tomatoes
Add soya mince and tinned tomatoes
Little bit of red wine
Marmite
Start adding some parsley
Then taste... it might not be that nice yet, so
Add balsamic vinegar and stock powder... and some more parsley (no stalks)
Leave it for a while so the soy can pick up the taste of something
