Halloumirooni

I love halloumi a lot.  Normally I just fry it a bit in some oil, sometimes I might jazz it up with some chilli.  This got a bit boring, so today I tried making halloumirooni!

What you need:

Spring onions
Halloumi
Brown and wild rice
Brocolli
Dried corriander
Balsamic vinegar
Olive oil

What you do:

Boil a small cup of the brown and wild rice.  This takes a while.

Here are the spring onions!
Fry up the spring onions.  I used 2.  Add some ground up corriander and a few fennel seeds to the onions.

Keep the green stem bit to fry up with the halloumi.


Then fry the halloumi.  Controversially, I cut up the halloumi into very small squares here:

Just before the rice is done, throw in a few small bits of broccoli (stir-fry style) and cook for a minute or two.

Then throw it all together in the frying pan and stir up.  Add a glug of balsamic vinegar and let it cook for a few seconds.  Add a glug of olive oil.  Stir up and serve.

It's actually very nice :)

Paneer Surprise!


This is basically curry.  I love curry and I am quite proud of this one because this is the first time I used paneer (paneer is a cheese, not a bike bag).

We start by browning the cheese, like halloumi.  Here's a picture of this:


Once all the paneer is nice and browned, leave the cheese to one side and cook up some onions.
Add some chillis.  I added 2 quite large chillis - this was quite hot, so it might have been a bit much.
Chuck the cheese back in to the frying pan and add some beans and any veggies you want to use.
Once it seems cooked, add in most of a tin of tomatoes and most of a tin of coconut milk.
Then add some coriander.  Although when I went to Tesco and bought coriander I got this:


Is this coriander??  I am unconvinced.

So... add a random green herb that may or may not be coriander.  Leave it to simmer and it might look a bit like this now:


Taste it, if it is too hot for you then add some more coconut milk (actually I added some lemon juice and that seemed to work too!)

I then left it simmering away for about 15 / 20 minutes and that seemed to do the trick.  When it was done it looked (and tasted) pretty good.

It would be nice served with rice, but I couldn't be arsed to make rice, so this is with yesterdays left over potatoes (yay for the left overs!)

Sausies that look a bit like poo...

These are soya mince sausages that you make up yourself.  Sadly they do look a bit like poo.  They don't taste like poo, but despite that, while you're eating them it's hard to forget that they do look like poo.

Here they are: 



They're really easy to make though.  You add some cold water to the mix.  Add some more spices and herbs to the mix.  Leave this for about ten minutes then cook.

The pack recommends that you can fry or grill these.  For some reason I decided that I knew best, and I oven cooked them.  Maybe that's why they look like they do?

I stuck them in the oven for about 15 minutes.

With these we have some salad potatoes with butter, cream cheese and (too much) pesto.

Also some bean salad that was left over from a picnic (love left overs!)

Picnic Pasta

What you need...

Pasta (maize and rice)
Fennel
Cream cheese
Little bit of onion
Pinenuts
Chilli
Lemon juice
Fennel seeds
Onion seeds

What you need to do...

Boil your pasta.  (Timing doesn't matter because this is served cold, so chillax)
Add the chopped up fennel into pasta water about 3 minutes before the pasta is cooked
While that is happening, fry up an onion with some chilli and pinenuts.
When the pasta is done, melt up some cream cheese with a little lemon juice and chuck in your pasta / fennel awesomeness.  If it feels too dry add some mayo.
Don't forget your onions and pinenut stuff.  Add that to the pasta.  Oh, and add the fennel and onion seeds... it doesn't really matter when you add them.
Parsley would be nice, but I didn't have any.
Throw a little grated cheese onto it all and mix in.

Stick it in some tupperware (yay, I love tupperware) and take to a nice park and have a picnic.

What you get...

Not too stodgy pasta for a hot day :)

Porridge

What you need...

Big fat organic porridge oats
Whole fat milk
Cinnamon sticks
Brown sugar
Maple syrup (or similar)

What you need to do... (for one serving)

Measure half a cup of oats... into the pan
Measure a cup of milk... also into the pan!
Add a bit of cinnamon stick (about the size of a finger)
Add some brown sugar to the porridge as it's cooking
Don't burn the porridge!
Put a little squirt of syrup into the bottom of your bowl
Add the nicely cooked porridge
Add some more sugar and syrup (but not lots)
Done!

What you get...

The most awesome porridge ever!!!

'Excellent' pasta for Nic

What you need...

Maize and rice pasta (it's very nice, lighter than normal pasta)
Cream cheese
A lot of cheddar cheese
Cherry tomatoes
Left overs from yesterday (we'll go into this below)

What you need to do...

Boil the pasta for about 9 minutes
Melt the cream cheese with the left overs
Add in the pasta
And handfuls of cheese
Serve with more cheese on top :)

What you get...

'Excellent' pasta.  I didn't realise it would be so good, and was very hungry, so sadly I didn't get a picture of this.  It looked mainly like pasta

The leftovers...

Quorn chunks cooked with tinned tomatoes, cherry tomatoes and some chillis.
This wasn't really that good on it's own (bit bland and samey) but was nice to add in the pasta.
